Ethiopian AnaSora Wush Wush Anaerobic Natural 20/03

Centered in the village of Ana Sora, part of the famous coffee region Guji, the Ana Sora washing station is well-known for its fantastic coffees. Lodated at an elevation of 1.900 and up to 2.350 meters above sea level the plantations is unique because of its high alittude. This causes slower maturation of the coffee cherries as the temperatures are lower and the cherries have more time to develop, which brings the super unique cup profile you may only find in Ethiopia.

The Ana Sora farms and washing station is also unique as it is privately owned and belongs to Israel Degfa, a very well-knowned producer of excellent coffees, who learned all about coffee production by growing up as the child of a cooperative manager and his mother selling green beans at a local bus stop.

Here the producer has fermented the cherries in sealed bags for 110 hours before drying them on raised screens for 10-14 days. This ‘anaerobic’ fermentation of cherries tends to intensify the acidity and mouthfeel of coffees as well as floral and fruit aromas. Applied on high quality Ethiopian coffees, the results are always explosive.

 

 

Roaster Notes:

The greens were very unassuming with uneven colors, a very common thing in special processing lots with very extensive fermentations. But what counts is this coffee delivers in taste and yes it delivers it very well. The Wush Wush varietal is always dear to us and every time we taste it, regardless from Colombia or Ethiopia, there’s always that fresh strawberry cream note that stands out. Watch out for it’s acidity when you brew but otherwise, get ready to be blown away.
